Bologna Sausage Pre-Mix with Cure
Create classic, smooth-textured bologna with this expertly blended seasoning mix. Featuring a balanced combination of savory spices, sweet and smoky notes, and a rich depth of flavor, this blend is designed for 25 lbs (11.34 kg) of smoked or cooked sausage.
Instructions:
- Grind: Use a fine plate to grind the meat to a smooth consistency.
- Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Add the included FS Cure at a rate of 40g per 25 lbs (or 8g per 5 lbs for smaller batches). Mix thoroughly until fully incorporated.
- Emulsify (if applicable): For a traditional smooth texture, blend the meat mixture with a small amount of ice or cold water using a food processor or emulsifier.
- Stuff: Fill casings of your choice, ensuring a firm, even fill without air pockets.
- Chill & Cook: Allow the sausages to rest in the fridge for a few hours to develop flavor before smoking or cooking to the proper internal temperature.

Wheat Flour, Salt, Modified Milk Ingredients, Corn Syrup Solids, Spice, Sugar, Dextrose, Sodium Erythorbate, Sodium Nitrite. (Cure packed separately – use FS Cure packet for precise measurements based on batch size: 40g for 25 lbs or 8g for 5 lbs).
