A beloved classic, this Homestyle Mennonite Sausage blend captures the rich, seasoned taste of traditional Mennonite-style smoked sausage. With a perfect balance of salt, sugar, and spices, this mix is designed for 25 lbs (11.34 kg) of smoked or cooked sausage, delivering an authentic homemade taste in every bite.

Instructions:

1. Grind: Use a medium or coarse plate to grind your meat to the desired texture. Traditional Mennonite sausage is often left slightly coarse for a heartier bite.
2. Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Add the included FS Cure at a rate of 40g per 25 lbs (or 8g per 5 lbs for smaller batches). Mix thoroughly until fully incorporated.
3. Bind: Continue mixing until the sausage reaches a tacky consistency, ensuring proper protein extraction for a firm, well-formed sausage.
4. Stuff: Fill casings of your choice, ensuring a firm, even fill without air pockets. Natural casings are traditionally used for their superior texture and bite.
5. Chill & Smoke: Allow sausages to rest in the fridge for a few hours to develop flavor before smoking. Smoke slowly at a low temperature until fully cooked, enhancing the deep, smoky flavor that defines classic Mennonite sausage.

Traditional Tips:

• Wood Choice Matters: Mennonite sausage is often smoked over hardwood, such as hickory or maple, for a deep, rich flavor.
• Serve it Right: Traditionally, this sausage is enjoyed pan-fried, grilled, or simply sliced and served with homemade bread and mustard.
• For Authentic Texture: Coarser grinds and a slow smoking process yield the best results for a traditional mouthfeel and flavor.
