Perfectly spiced, it provides a mild, savory profile that’s ideal for anyone who enjoys classic Italian sausage without overpowering heat. This blend is excellent for creating 20 lbs (9.07 kg) of finished sausage, offering the familiar taste of Italy right at home.
Instructions:
- Grind: Pass your meat through the desired plate size (medium or fine, depending on your texture preference).
- Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Blend thoroughly until the seasoning is fully incorporated into the meat.
- Bind: Gradually add cold water or crushed ice (up to 1L for 25 lbs of meat) while mixing, ensuring a smooth and sticky texture. Adjust the water as necessary to achieve the desired consistency.
- Stuff: Stuff the seasoned meat into your choice of casings or press into patties. Ensure an even fill without air pockets for optimal texture. *note: Extra water may be required to make stuffing smaller breakfast sausages due to the pressure required.
- Chill & Cook: Refrigerate the sausages for a few hours before cooking or freezing to allow flavors to develop.
