Instructions:
- Grind: Grind your meat using a medium or fine plate, depending on the texture you prefer for your Italian sausage.
- Mix: Distribute the seasoning evenly over 20 lbs (9.07 kg) of meat. Mix thoroughly to ensure the seasoning is fully incorporated.
- Bind: Slowly add cold water (up to 750mL for 20 lbs of meat), mixing continuously until you reach the desired consistency. Add more water as needed to ensure a smooth, tacky texture.
- Stuff: Stuff the seasoned meat into your preferred casings, ensuring a firm fill without air pockets.
- Chill & Cook: Allow the sausages to chill in the fridge for several hours to allow the flavors to develop before cooking or freezing.
