Pork & Beef Sausage Seasoning – 750g

Perfectly balanced for a classic, hearty sausage, this blend delivers a rich and savory flavor that’s right at home on the dinner table. Designed for a smooth, middle-of-the-road taste, it’s a great choice for those who love traditional pork and beef sausages without an overpowering spice kick.

Instructions:

1. Grind: Pass your meat through a medium (6mm) or fine (4.5mm) plate, depending on your preferred texture.
2. Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Mix thoroughly until the meat becomes tacky and well-incorporated.
3. Bind: Slowly add cold water or crushed ice (up to 3.75 lbs / 1.7 litres(kg) while mixing to improve texture and juiciness. Continue mixing until the sausage develops a uniform, sticky consistency.
4. Stuff: Fill into casings of your choice, ensuring an even, firm fill without air pockets.
5. Chill & Cook: Allow sausages to rest in the fridge for a few hours before cooking or freezing for best results.
